Had some starting to look funky bananas around so made some Banana Bread tonight from an old 4H recipe book. Love community created cookbooks. Sadly, my eyes got a little off and read another recipes temperature so a little brown around the edges but yummy none the less. Maybe if I would've read the nice little tip: "put a small dish of water in the oven, to keep crust from getting too hard or brown" it would've been better. I also added half a bag of mini chocolate chips.
Banana Bread
- 3/4 C sugar
- 1 2/3 C bananas (about 3)
- 3/4 C. Vegetable oil
- 2 eggs
- 2 C flour
- 1/2 C chopped walnuts
- 1 C mini chocolate chips
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 2 teaspoons vanilla
Heat oven to 325F. Grease loaf pan. Mix sugar, bananas, oil and eggs in large bowl with wooden spoon. Stir in remaining ingredients. Pour into loaf pan. Bake until wooden pick comes out clean, about 60-70 minutes. Let cool 10 minutes before removing from pan. Then let cool completely before slicing.
I didn't wait too long to slice, warm bread was good on a cold night like tonight!
Next time may try muffins with the old bananas. What's your favorite bread/muffin flavor?
oh yum! i loooooove banana bread - i'm even having some for breaky this morning! (although, it's from a coffee shop, not homemade)
my mom used to make zucchini bread with chocolate chips and it was always a fave when i was young :)

Would love a slice of that banana bread right now! My favorite bread flavor, hands down, is zucchini bread. Without nuts or chocolate chips. Mmmmmm :)

I LOVE banana bread....with a thick layer of margarine on top. And pumpkin bread is a close second. Sounds delicious!
