Made some Easter cupcakes today:
White Cake Mix
1 Pkg Cheesecake Instant Pudding
1/2 C milk
1/2 C oil
2 egg whites
Mix ingriendients for 2 minutes. Fill cupcake cups 2/3 full & bake 350 degrees for 22-25 minutes.
Whipped Cream Frosting
1 carton heavy whipping cream
1/4 C powdered sugar
1/2 tsp vanilla
Beat ingriedients in chilled mixing bowl with wire whisk.
Divide 2/3 C shredded coconut into baggies & add a few drops of desired food coloring & shake until coconut is colored. Frost cooled cupcakes with whipped cream frosting & top with coconut & 3 jelly beans! Love the added crunch of coconut with the frosting! A take off from Cake Doctor.

For supper got out the meatballs and lingonberry jam from IKEA & found the recipe for cream sauce online, boiled some red potatoes & had my must have lunch when shopping at IKEA - might not look pretty but it sure was good!
