It's rainy and blah outside. The perfect day to make some Baked Potato Soup with some crusty bread on the side.
Got this recipe from Kim, one of the members of my scrap group, Madscrappin' Diva's. She puts together our weekend crops with Kristin and this is usually served one of the nights and is a big hit! Too yummy! Hope you try it!
Baked Potato Soup
8 slices bacon
1/2 C. chopped onion (optional)
2 C. chopped potatoes (I use 1 additional cup per batch that I make)
1 C. water
1 tsp. salt
1/8 tsp. pepper
1 can cream of chicken soup
1 C. sour cream
1 1/2 C. milk
Cut bacon into little pieces. Over medium heat in 3-quart saucepan,
heat bacon until browned. Add onions; continue cooking until
tender. Drain. Add potatoes, water, salt and pepper; continue
cooking until potatoes are tender 10-15 minutes. Reduce heat to
low; stir in soup, sour cream and milk. Continue cooking, stirring
occasionally, until heated through.
